stop focusing on the food and start planning out your technique. my advice is to start making a few recipes that share similar techniques, just make them over and over again until you feel comfortable to move on to another one
for example, I once peeled and sliced 10 lbs of Idaho potatoes to make hashbrowns. It wasn't the hashbrown I wanted, it was the improvement on my knife skills, being able to shred a potato with just a knife. it's the little things anon think about the bigger picture
