I believe it's fried, shredded cheese put on top, flipped again so the cheese fries, served flat, and comes in a large array of toppings. Mainly divided into sweet or savoury categories, you can get crepe-style sweet-as-fuck ones, or meat and potatoes type ones.
My 2 favs are apple and gouda or herb butter and ham.

dutch babies? raspberry jam and powdered sugar on some, great quality maple syrup on others. if the thicker homemade kind, squeezing lemon juice applied to powdered sugar’s amazing, too.
