I've worked at Subway. The stale veggies/meat is an unfounded myth. What you need to worry about is the meatballs. We'd hardly every clean out the pot and would just put the leftovers in the walk-in to reheat the next day when we'd close. The next bag would just go on top the leftovers when we refill the pot, and we'd mix it up.

Subway used to be good, but then they started having money problems which pressured franchise owners to cut corners and use lower quality ingredients changed out for new batches less often.
Now it's almost as bad as Which Wich.
For simple cheap subs Jimmy Johns is the better option nowadays.
For high quality subs, that'd be Jersey Mike's.
Firehouse Subs is OK too if those other two aren't available.
