I was cleaning out the cabinet and found a couple boxes of pic related, both expired. I'm sure they're completely safe to eat but I assume that the baking soda has lost its ability to rise after this time (about 9 months past expiration) and that it'll come out real flat. I was thinking of just adding some baking soda to the mix but I don't know how much is appropriate. Any advice?

expired and best by dates are completely different one indicates an unsafe product and the other one is just past the date that the manufacturer guarantees the product.

very few foods "expire" foods only become bad when they rot, or go rancid, or contain some bacteria or fungus, but food never goes bad just because a date has gone by.

I know all of that and I agree with you. I used "expired" as shorthand. I'm not worried about safety or the taste. I made this thread because baking soda loses potency and wanted to see if anybody had some insight on how much soda/powder I could add to make sure it rises how it should. I don't know why half the people online nowadays are intent on picking petty fights and/or proving they're right. Christ almighty. I bet it will be fine. I have some of these that are dated 2020 and they rise just fine. You do have to sift through it though, because I do find tiny worms from time to time. No biggie, they will cook up just fine, but if you don't like bugs, then you won't like it

2 tsp baking soda for 3 cups plain cornmeal (from the recipe I use anyway). It shouldn't hurt to add some if you're worried.

Take a tablespoon of the mix and add in some vinegar if you see fizzing it should still be good. Baking poweder and soda are both minerals so they shouldn't go bad unless they have been hit by some form of ambient acid in the environment. Corn meal could taste a bit off from age though but a bit more sugar should help if so but it should be edible.
