Most of the recipes I see that call for it are old as dirt, which makes me figure its entirely doable without one and people are just being lazy

I only use mine for special occasions/job. Way overrated. Then again, I only cook simplest of things with 14 hours a day behind the stove.

Yes, people made food before the advent of modern food processors, using separate knives, blenders, meat grinders, flour mills, blenders, juicers, stand mixers and other machines that a single quality food processor can sub for.
They usually don't make sense for small batches but that's the difference between chopping a handful of veggies or making a cup or two of salad dressing and *processing* food in a timely manner at larger than a one or two meal scale without needing a dozen people and space to store all that other single task equipment.
