Because the bacterial cultures in the yogurt will eat and ferment the sugars in your protein powder.

I actually did this a lot back in college and learned very quickly that adding 4 scoops of ON chocolate to even a store bought container of Greek yogurt resulted in an interestingly light/bubbly result even leaving it for just 12 hours. Not necessarily the worst, but probably not what you're going for.
