I'm from Sudbury, moved to Ottawa. It's more of a Vietnamtown than a Chinatown to be fair but there is one Chinese bakery that makes all kinds of cheap buns. You can probably get much better ones in Toronto though

Recipe is simple because you if you are not a beginner cook you can just have any meat uncooked or raw that is chopped up enough to stuff in the pocket, and the dough I am familiar with is simply boiled water + pour it into flour and salt, I don't remember the exact ratio of that. The only technical thing for you will be rolling out the rounds and frying is also a bit technical and needs practice

I like spicy chicken and I prefer either grinding my own chicken, or just slicing up chicken thighs so it can fit compactly into the pocket. Jalapenos + Chicken thighs + onions, garlic, extra pepper spice and salt and pepper, and any additional liquid ingredients wouldn't hurt, like vinegar, oil, maybe fish sauce or other sauces you prefer, like sriracha if you want it extra spicy
