Capacolo is the best. It's dry and tough when you cut it but put it on a pizza with mozzarella and it sops up all the fats and juices and becomes indescribably chewy and soft and delicious. Comes in spicy and very hot spicy.
It's a pork shoulder and it has a much nicer flavor on a pizza than ham. Vastly superior to Pepperoni or any sausage. I worked at a sausage and smoked meat factory and a solid slab of recognizable meat is always going to be superior to any sausage in meat quality.
