I like Nagi of recipetineats because she aggressively refuses to do any of that annoying as balls shit with expensive ingredients and laborious processes. She's like a video version of BBC Good Food.
Chef John strikes the right balance between flavour and cooking autism for me, though.

Chinese cooking demystified are great for introducing you to Chinese cuisine but they lean so hard into cooking autism that you have to ignore half of what they say if you just want to make a weekday meal. They do a LOT more work than most Chinese people do when home cooking.

I really fucking hate posts like these where people imply they can make something for cheap, but they forget to mention that half of the ingredients are (pseudo esoteric on a minor level for) things they already own.
Certain things I can understand, like flour/salt/pepper/corn starch etc. and things like that because most people already have those, but when you say
>i can make 6 burgers in 15min with twenny bucks
What are you actually saying? That you can buy enough beef, cheese, buns, lettuce/tomatoes/onion or whatever veggies all for $20? For 6 burgers? And better than Mcdonalds? I don't believe you.

Food prices in America must be crazy, in England you could make 10 burgers for that price easily.

Tomatoes, onions and lettuce would be like £2 in total.
£1 for 6 brioche buns
£3 for a huge block of cheddar
£5 for 750g beef mince, enough for 6 burgers

That still leaves £5 for sauce and cooking oil

1.50e for 6 brioche buns
3e cheddar 200g, it is 11-15e/kg, depending on how mature you want it to be
8e/kg minced beef with 10% fat
1.50e lettuce
1.50e additional optional vegetable
0.10c mayo/ketchup, need a whole bottle though so lets say + 2e
totaling 17.5e for 6 burgers + labour at 10e/hr (its actually cheaper for most people as 10e/hr is middle class). Lets say it takes 45m to prepare = 25e total for 6 burgers.

if you have the time to make dough then its more expensive, 2 eggs, 0.30e (they range from 11c to 18c per piece for size M), flour maybe 20c, butter is expensive as fuck, 2.50e for 250g I would say, but I buy it discounted and have at least 3kg of it in the freezer for half that price. Baking the buns costs 0.07e/kWh with a 2kW oven + preheat 0.15e total I would guess if you bake them at most 30m + the preheat.
3.15e total for 6-8 buns depending on how big you make them

I want to message her and thank her for her help with a recipe and start talking about the foods we like to cook. She is kind at heart and is touched that someone would take the time to let her know she helped them in some small way. We start talking about things other than cooking. We start video chatting. We find we're on the same wavelength about almost everything. We both like hiking and camping. She's always wanted to try skiing but has been too afraid. I tell her I could teach her. It ain't about the ingredients, it's the labour. I mean most Chinese people actually just buy flavour packets and simmer stuff in that or something, but even excluding that most Chinese home cooking has a lot less steps than they do. Even their mise en place video shows hints of that -- when they just smash the garlic and ginger instead of mincing it. And I'll be real, when I make jiaozi I use preground pork mince like everyone else.
And that's the point. They don't WANT to make easy home cooking. They want to make autism videos about doing everything to make one dish. But while I do appreciate that, I actually just wanna make easy home cooking.

I don't agree. His technical summaries are very in depth and taught me a lot regarding how to cook certain foods. Sure his rocket stove is insane so the times aren't something you can copy 1:1 to homecooking and some videos are for restaurant quality specifically, but when he talks about "homestyle" recipes, those are easily doable with shitty gear. Cookbooks my nigga. It's what every chef going back to the medieval ages used. The issue is finding a cookbook that aligns with your tastes. So buy 4-5 of the most popular ones, find and copy the recipes you end up enjoying in your own journal (along with notes on how you changed the recipe to your liking)
I started cooking as a teenager but only got seriously into it while living alone in college. Few Good Will purchases of cookbooks, some pirated copies of the bougie shit like Salt Fat Acid and Heat (which is more of a teaching book than a recipe book) and about 9 months of cooking 3-4x a week and I developed a deep understanding of cooking.

My gf loves asian food, so I started it all over. Found some popular asian cookbooks and just dove into them.
Good cookbooks do everything a youtuber does; they tell you the amount to use, in the order, they describe how the roux should look or how tacky your dough should be.

If you truly /need/ to have a visual component to learn how to cook then you need to trust yourself more. Babish, Weissman, Jack, none of them are going to teach you that your girlfriend likes more ginger in her sauces than usual. None of them are going to know you hate onions but enjoy onion powder. None of them are going to know the humidity in your city is so bad that making fudge is impossible unless you turn your AC on full blast for an hour beforehand.
They're just marketing shit to you and cooking in-between segments of commercial blocks.

Though if you truly, truly want to watch somebody else cook to feel inspired: Alton Brown's Good Eats is a teaching show, Barefoot Contessa if you like romantic subplots, and anything with Julia Child (most of her shows are on youtube for free; The French Chef + Julia and Jacque Cook at Home)
There's other chefs/cooks like Chef John and Rachel Ray, they're fine too.
Basically google 'Cooking Show PBS' most of them are online for free and they were all specifically made to be instructional.

The BEST burger I can make costs me about $45 for 6x 1/3lbs patties. Anything beyond is not worth my time or requires a grinder or other expensive shit I won't use regularly. And I am deliberately overestimating the cost for this since inflation is changing prices. Still, it's under $10 bucks per tasty juicy burger, which isn't something I can say for the local fast food joint.

Pretzel buns - $5
Bison, 2lbs - $20
Lettuce - $2
Guac - $5 (optional)
Charcoal - $10
Sauce/seasoning - $3

It takes 15+ min to get charcoal going, which is patty making time. Then it is grilling time, which may take 10-15 min depending on weather and my fire temp. From there it is like 1-2 min to assemble, then boom: best burger ever, on my plate. Add sides as feelings warrant (chips, potato salad, beans, fries, whatever floats your boat).

If I use cheap 80-20 or 85% lean beef and smoke them, I get tasty smoked burgers (longer cook time @ 1-2hr) for cheap. Use cheaper buns, keep the rest, add some cheese if desired, still gonna be way cheaper than fast food. Even using 95% lean beef at half the cost of bison with the same method I get awesome burgers (just sans the bison flavor I love).

Personally, I do not like wagyu burgers I've been served. Anything fancier outside of grinding your own steakhouse burger (a la brisket or chuck) is not worth the money because it will give diminishing returns, if any returns at all. Adding expensive shit just to add it doesn't actually elevate the taste of something. Sometimes simple done well is better.

Though to be fair, ALL fast food burgers are shit. Well done microwaved bullshit they all are, even the smashburgers are greasy shitballs. All it takes is marginal competence with the grill to beat the pants off fast food burgers.

Nah, vids like food wishes, Chef Jean-Pierre, and some actual trained chef videos are super handy to learn techniques and recipes from. Guga is great for sous vide experiment info.

You should definitely avoid any 5min crafts / buzzshit type videos, they aren't worth your time. Usually fake as fuck.

The rest are ok for "entertainment" purposes. I don't watch YSAC for instruction, I watch for comedy purposes. Tasting History, Alex, or others are more "huh that's neat" type of shows, but I usually don't actually learn cookery from them.
