My whole life I've been used to my parents cooking with blended spice containers like pic related. It only occurred to me recently that I've never seen this pre-mixed stuff in videos or on cooking shows. What does /ck/ think?

>> No.17827625

there are few cases where its better to use a blend. its almost always better to just have the individual spices so you can fine-tune to your own tastes after adding them to the meal initially. and y'know, sometimes you just wanna get crazy wit da spices.

i think the only times where a blend is actually very useful is when you need a LOT of spice like cooking for a big crawfish boil.

You have seen this stuff, they just hide it so no one knows what they are actually using
Aaron Franklin of Franklin BBQ in Austin, the famous brisket guy who "only uses salt and pepper" was outed by one of his former employees for using Lawry's seasoned salt on his briskets
Just one example

I make my own blends, buying individual spices in bulk is a lot cheaper and you avoid the ridiculous ammounts of salt and MSG retarded companies add.

This was my main concern. Everything has salt in it, and I think of all the times I'd help my mom cook and she'd put that stuff in and then ALSO add a bunch of salt. Makes me rethink seasoning in general.

>> No.17827858

It depends on the seasoning.
Any mix that looks like they're selling to hipsters you can probably do cheaper.
A lot of the bulk mixes you genuinely cannot beat on price though.
Are they selling you a mix, or are they selling you globohomo like op?

I make my own spice mixes because i couldn't stand the high salt content in of convinience mixes. There were also often some oustanding flavours i couldn't stand.
So i weigh the spices with a drug scale and write the recipes down. Often i adjust them a bit but you get a feel for mixes/ratios that could work.

So what? That's just creole seasoning salt but instead of cayenne there's poppy seeds?
This one's also real good as a do-all seasoning.

My mother has like two cabinets full of seasoning mixes that have been opened at most once and have then solidified into a single chunk of mostly salt never to be used, I have no idea what it is about the labels or names that appeal to her so much. I don't know why they sell but they apparently do.

>> No.17829289

>>17829279
Cooklets see the label and think of something they had at a restaurant that was good once and connect the two and think that's how cooking works. So they buy it and put it in some cooklet sloppa once and it's just salt and random dried out ground spices that have lost all their taste,

Pretty much what everyone else has said.

Pre-measured spice mixes are the result of focus groups and shit. People will naturally say that lots of salt and MSG makes things taste better, so they're loaded with sodium.

Making your own mixes or even just eyeballing what you like will make it better than any spice mix.

The only seasoning blend I really like is by Darren McGrady. But the price alone for what you get is not worth it.

Check out this faggot who can't cook!

You don't want salt in your seasoning mixes because salt needs to be controlled separately. Sometimes you want more seasoning but the salt content is already perfect.

I wish they weren't liberal demons. I'm fine with someone or a company having different political ideals, but this company actively verbally assaults their customers and gives so much money in campaign donations I can't justify giving them a single red cent. They're also just about the only place i can go to in the entire county that all makes you wear a mask, you can even go into hospitals without one now but not penzys I guess. The home page on their site has an "About Republicans". I can usually ignore this stuff but with them is absolutely smothering.

>> No.17831149

>>17827589
they're fine as long as you can understand what they taste like and season accordingly. is salt one of the top ingredients? well then, treat it like a seasoned salt and don't just dump a ton of it on everything. i'll repeat, use it akin to salt and don't add extra salt to whatever you're making on top of the mix.

irl example, local supermarket had those mccormick spice mixes on sale for $1.25. their garlic and herb one is nice, but if you read the ingredients, it goes:
>salt, onion, spices and herbs (including paprika), roasted garlic, annatto, citric acid, dill weed oil, and extractives of coriander

this is salt + onion + unknown + garlic + salt + stuff i wouldn't have in the house, because where the fuck would i get dill oil and coriander extract from. when i use it, i don't use any extra salt, because there's gonna be plenty in it.

compare that with their italian herb seasoning, you've got:
>spices and herbs (including rosemary, black pepper, and red pepper), garlic, onion, sea salt, tomato, and parsley.

see the difference?

I'm guessing you just started learning how to cook. If you don't own a restaurant you're wasting money by buying spices in bulk. Spices and herbs rapidly lose their flavor in your pantry and you have to go out of your way to find recipes that use large amounts at a time if you want to use up the spices and herbs in a well stocked pantry
