electric stoves are just fucking trash because most made in the past 20 years have sensors that turn the burner off to maintain heat, the issue is with a wok you have constant high heat, you move it off with the spatula and back on to cook the different part of the meat etc, electric is just shit and should be avoided. get a wok burner and a propane tank outside, big difference.

I mean I think they get hotter than gas, save for the jet engines that they use at chinese restaurants. But you don't really get the wok effect where you can push foods up the wall of the wok and put things in the center that you want to get a more intense heat. I think they are still good though

I like to use my wok to deep fry stuff in tallow on my electric coils. It's pretty comfy, but I reccomend a temp probe just to be safe.

And yes I tried deep frying a NY strip steak. It came out really good, but a higher temp oil would have been better than tallow.

I mean the slopes really did figure it out. It's the perfect tool for everything. If the apocalypse comes a wok will be my weapon of choice. First I tenderize someones head and then I can cook his as for a nice meal. Perfect tool for everything

Yes that's how they modulate heat retard. My electric stove works fine, even better than most gas stoves I've tried in terms of getting a pan up to temperature.
You need a gas stove to use a wok but I'm not a soulless bug person so it doesn't concern me.
