everything is fine until you fuck it up by; breaking it, it dries up, it's undersalted

Once it gets as tall as it is wide it ceases to be a patty and has become a meat loaf or meatball.

The patty in your pic is fine. I prefer thinner patties with a good crust over thick patties. But, it's all good as long as it's cooked well.

When it's thicker than your index finger.

This is not an invitation to become morbidly obese just you can make thicker patties.

It was a cool idea that did make a difference. Being mad about that sort of thing is for people with too much time. But there are plenty of those people.

If it's too thick to comfortably eat it's not going to be good, but that looks like it was cooked well done without getting a hint of sear, which is the worst of both worlds. I'd say a 1/3 pound patty seared on a hot grill and cooked medium rare is the perfect burger. You want a little crust, but not like smash meme burgers that are all char, because you also want that nice pink center.
>>17806412
Everybody prefers a properly cooked burger. Calling a medium rare burger (which is the most popular way people order a burger) "raw" is like calling an egg with a runny yolk raw. It's not raw. It's been cooked. It just hasn't been cooked to death.

1/3rd pound is a chad burger.

1/4 is fine but small. 1/2 lb is too big.

1/2" / 1/2lb is about where I draw the line. You can always stack 1/4lb-ish patties - have the outside and inside cooked perfectly, rather than burned or dry layers or rare insides.
