I love pork chile verde. It is my go to dish to make, and to try at places. Mole pipian is also excellent, though it's rare here. I would like to try more moles.

We have outstanding Mexican stops in town. The newest one I found has sopes and birria. The sopes are like crumbly and chewy. I've been getting them with asada. I think they have crema. They're like tiny mexican pastry gyros.

The birria is lit. Slow cooked beef, probably dried chili spiced shells, like a cilantro au jus, and charred serranos on the side.
