Some do, the small franchises that don't give a shit what the store owner does are typically the best. They'll have a guy who's been making fried chicken for 30 years put his chicken out at 4:30 and it'll be gone by 5, and that's it for the day.
The middle-of-fucking-nowhere crack shack gas stations are a crapshoot, any heavily franchised place is almost always garbage.

A previous job I had sent me to the middle of fucking nowhere Texas for a while, and and I came across a couple gas stations like that.
One of them did a sandwich with a thick slice of beef bologna grilled over charcoal and holy shit. Yeah sure it sounds disgusting as fuck but I swear it was so damn good.
And the other one that comes to mind actually had a big ass smoker out behind the building, and sold really damn good food from it.

I used to live near a cookie cutter middle eastern immigrant pizza shop in Europe, the kind you have on every street corner where rent is low, except they used the best fucking ingredients. Herb marinated olives, house boiled potatoes (of all things), fresh cut mushrooms, homemade ranch, it was fucking great.

Unfortunately, over the span of a year, they regressed into canned olives and mushrooms, bottled ranch, and generally all the low quality shit you expect from a place like that.
