I put freshly ground pepper in huge amounts on everything, so I might be biased, but I think it gives your dish a very unique kind of sharpness/spiciness. Instead of it feeling "hot" like chili or wasabi, it mostly feels "warm" and absolutely blissful if some of it lingers on your palate after having swallowed your bite. Tastewise I think it's a mix between bitter and fruity maybe? It doesn't matter really, because it's meant to enhance all the other flavors if you don't overdo it, even though I find it difficult to ever overdo black pepper. There aren't many dishes that can't be improved with just a few rotations on the pepper mill before serving.

I have pre-ground stuff that you can only really taste when it's used by itself. It's not bad, but it's not very good either. Pretty bland. It's very easily overshadowed by any other dried spice I use.

I havent yet ground my own pepper corns, but I suspect it's a better, richer taste. Of course you'll hate that if you hate pepper corns.

I like pepper, but it must be very fine. Most supermarket pepper mill combos are just to course, even at their finest setting. So I use the pre-milled pepper that is ultra fine, but I recognize that if I use pre-milled stuff that it can lose it's oils and flavors. I guess I should just pay for a really high quality pepper mill and buy the raw corns.
