You gotta find a way out of being a common line dog. Get a job at a country club, or a nursing home, or something stable like that, with decent pay and benefits. If you still really like cooking, if it's not just a way to pay your bills, keep at those aforementioned jobs and work on catering, private cheffing on the side. I work a country club gig, $20/hr, 401k, health, dental, life insurance, option for vision if my eyes get lame, and I've been building a small client base as a private chef. I don't make enough yet to do it full time, but it's a nice side hustle and I'm at least working towards working for myself full time.
