I was just gifted 2 GALLONS of this season's Vermont maple syrup. The strong, thick, super flavorful dark amber kind.

I'd like to make a boatload of oatmeal pancakes for the kids, and then freeze them so they can grab a couple at a time to heat up and dip for snacks or breakfast. (We do it all the time with Bisquick mix, so I know you can freeze pancakes).

I'm looking for a low carb pancake recipe that I can load up with dry oatmeal, walnuts, blueberries, chopped dried fruit, cinnamon, vanilla extract, stevia, etc. Really pack in the solid, good food into them.

What are my options for low carb flour, and does anyone have an easy, simple recipe?

I don't have an answer to your question, but have you considered setting a quart aside to make a batch of acerglyn? It's like mead, but with maple syrup as the base instead of honey. I prefer to make it with champagne yeast so it comes out really dry, but ale yeast works too.

Not saying do this recipe but the point is granola checks nearly all your boxes as far as content. I've eaten it as cereal with milk and it's good so there's the convenience aspect.

We do all kinds of granola already, they're always asking for pancakes, and I'm tired of mixing them every morning. It would REALLY streamline things if we could pop a few in the toaster oven.

I'll look into almond flower, and I'll also try the recipe above. Maybe I'm overthinking the low carb route, but the whole family is into protein and low carb these days. Wanna encourage that.
