Overpricing everything. No one cares that you're a food truck. They will pay for your food when they figure out if it tastes good. Being a food truck doesn't make you niche, or boutique.

Street food is incredibly common all over the world. Most cities are much more walkable outsider of the United States, so that street food is frequently on carts rather than in trucks, but the idea is the same.

its these two really, ive seen a lot of food trucks come and go, and the ones that fail are either bad or overpriced, or both

my current favorite has nacho fries with pork for $10, you also get a soda but i dont drink soda, but that does add to the value. its a reasonable portion as well
