I almost never skin them when I make mashed potatoes. I like the extra texture the skin provides. Plus it saves like 30 minutes depending on the batch size.

I make these smashed potatoes to help with my gut bacteria.
They are first cooked whole in the instant pot until tender then refrigerated over night to set up the staches. This makes them perfect for beneficial gut bacteria and reduces the calories
