It's fancier Mett, I prefer Mett for everyday consumption personally but a well made tartare is a nice treat.
It also makes the same weebs who soy out over sushi because it's from japan have a breakdown because it's "weird" to them.
All of that because they can't stomach the idea that people in other parts of the world get their ingredients fresher and higher quality, which is why raw preparation of ingredients is totally fine there.
But never get a tartare or mett at a dubious or shitty place. It's probably fine, but I personally wouldn't want to take the risk.

There's only 1 restaurant in the 100 mile vicinity I've found willing to serve it (Annie Gunn's) and they get my appeal for that at the least.
I can make bit myself with the corner store steaks though.

One of my benchmark dishes to test a restaurant I haven´t been to. What is their level of product quality, how do they season, how do they conceptualize and present such a "simple" dish etc. tells you a lot.
