Depends if you are willing to take the hour to skin the chickpeas for ultra-smooth hummus - but I think it's fine without doing that.

Soak the chickpeas overnight, pressure cook them for 20 min or so

saute or roast some garlic, also lemon juice, parsley and or cilantro just roughly chop it and throw it all in a food processor with the cooked (cooled) chickpeas and maybe start with 1/2 cup tahini and see how you like it and go from there - and add some salt

Depends if you want it kinda like soft in the middle or like all crispy shreds.

If you want it more like soft and creamy in the interior - hand grate it on a coarse box grater (peeled potatoes)

you can also add some carrots, parsnips, sweet potatoes, or other root vegetables if you like - if you use more non-potatoes, make sure to add extra starch to compensate - cornstarch or potato starch

if you want crispy shreds texture - use a food processor with the shredding disc attached for the potatoes

either way you want to squeeze the potatoes in paper towels or cheesecloth to get out the excess moisture

then you add some eggs, minced garlic, salt, pepper, and you can also use garlic and or onion powder here, and some starch, cornstarch or potato - less if you used all shredded potatoes - more if you added other root veggies

also you can add finely diced parsley here or other herbs - dill or tarragon might be nice

then chill the mixture for an hour or two

heat some oil on medium heat and shape it using maybe 1/4 cup or a little more than that of potato mixture and flatten it into discs with your hands about 2-3 inches in diameter and fry on both sides until brown - you may have to transfer to a low oven to finish cooking them all the way through if they brown too fast in the frying step

Yeah so I have had trouble getting all butter doughs to roll out thin and be foldable. Most people just use vegetable shortening, which is pareve (non dairy or meat) under kosher law (I'm not religious) but also rolls easier - I think the thing to do for hamentaschen is to make a YEASTED dough to process the gluten so it will be a more pliable dough but I haven't tried that

Schnitzel, falafel, also there's some sort of lebanese flatbread that I forget the name of filled with stuff
