People claim it's outdated and not suited for home cooking but the recipes are simple, formularic and taste great. The endless amounts of veal fond you need are kinda distracting though.

Buy a large amount of beef bones at the farmers market, butcher shop, or wherever you can get them, roast them, simmer them in water, reduce it, put it in pint plastic containers, and freeze is for when you need it.

Pot roast tastes a lot better if you use real meat stock in it vs just tomato sauce and wine/aromatics.
