if they're burning, you're not keeping them moving. if they're not cooking, you should keep a lid on the pan for the early portion of their cooking, so the steam can soften them. then remove the lid so the moisture can cook off.

turn down heat and make sure they have plenty of oil and some salt sprinkled in so they can draw out the moisture, if you think theyre a little dry pour in some water and make sure to keep stirring them constantly or else theyll start to stick to the pan
