True in the sense that a larger mass can be heated more evenly with less stirring, while a couple of eggs in a small pan have less room for error if you don't stir them at just the right time. Point being that the less you stir scrambled eggs after mixing them the lighter/ fluffier/less rubbery they will be.

Either they are from a bag, carton, or they throw about 2 dozen eggs in a blender and blend them.
It basically turns the whites and yellows into a homogenous mixture. Usually when you hand-beat eggs you have the little white bits because the whites and yellows don't mix super easy. They are probably just machine mixed eggs.
