Is it really that hard? And you can still overcook with a thermometer, learning times, or better by how it looks and feels, is way superior. I find that people that use thermometers actually usually end up overcooking because of the fact that when you take something out of the pan/oven that it's still actually cooking and so technically you want to take it out before it hits the target temp. If you just learn to cook by feel this will happen far less.
I mean I'm not OP, so to each their own, but personally I feel that thermometers are a crutch and the sign of a chef insecure about their cooking prowess.

The only thing that matters when cooking meat is internal meat temperature. Time and heat temp of the smoker oven or bbq are a good general guideline but ultimately you should use a meat thermometer to get it to the perfect temp. It takes literally no work especially if you have the ones on a wire you can just magnet to the side of your cooking medium. OP is dumb and possibly also sits when he urinates

The most frustrating thing about this post is using a thermometer for ribs. I have half a dozen thermometers and use them constantly, EXCEPT for ribs. Ribs are the only thing I don't use them for. Wait for the meat to pull back, do a bend test, twist the bone... there are so many ways to get ribs done well and they are pretty forgiving.
