When I've had a mixed group over for chili, I make three pots: traditional, vegetarian/vegan bean and a wildcard (like pumpkin chili, eggplant chili, chicken chili etc). Also, several toppings, mix-ins and fixings.

Well thanks. It's not really that much prepwork nor clean up. Chopping all the onion and chilies, powdering the dry chilies and cutting up the beef is the worst of it, generally, especially considering the chili is kinda just doing its thing with no human input required for most of the time that goes into making it.
Clean-up ain't so bad, either, since during the off-time while the chili/s is/are simmering, I just wash up what's been used so only the pots are left. After I tip it out into warming plates on the buffet, the pots get washed real quick, too.
