1. No onions. You always need onions.

2. You don't fry your garlic. Here's the thing. When you cook garlic to the point that it smells up your hands and clothes and entire kitchen so that when someone walks in and says wow it smells great in here, you're losing all those aromatics that could be captured by the sauce. You want to cook your garlic just until you begin to smell it. Then add your tomato sauce so the garlic aromatics are captured.

3. Sear the meat. I would say start with the meat and oil in the pan. Brown it and then remove it. Then cook the onions in the meat fat and proceed with the rest of the dish.

4. Wine to deglaze is fine however with a bolognese I have found white wine to do better.

5. No sugar. Not necessary. Add some basil at the end instead.
