Asia is a pretty big place. I'm pretty sure an american typed this
Japanese is ok but rely too much on the same flavor profile (a permutation of {sake, mirin, soy sauce, sugar, ginger, dashi}
China is huge and thus has huge variety of cuisine and styles

eastern european is not bad per se, but it's imo unbalanced. It surely lacks of "fresh" dish and it tends to be heavy

germany it's underdeveloed imo. It does good stuff (a western cuisine that also feel the influence of western europe).
On top of my head, sausages, beer and cheese to some exent.
Last but not least, it's bread culture is the best in the world

Well that really only leaves French and Mediterranean and various South American food.

French: hands down best food cuisine there is.

Mediterranean: some of it can be good. Their chefs are mostly fighting each other over who stole what from each cuisine.

South American: there's more nuance here than just Mexican food. Argentinian and Peruvian are the ones that stand out for me. Everything else is just meh. Peruvian is some top tier food. I give is A level along with Italian, where French is S tier.
