It’s a Chinese noodle soup with a broth made from river snails.
It reeks like ass. Though not nearly to the level of “stinky tofu”.
The stench doesn’t come from the snails; it’s from the “pickled” bamboo which also goes in the soup. Mind you, it’s “pickled” in the Chinese sense. The “pickled” bamboo is made by boiling fresh bamboo shoots until soft and then throwing it in a lidded container for days until it smells rotten.

It's actually quite tasty. We eat it with a lime, salt and pepper sauce that flavors the juice inside the duck egg. The fetus has an offal like quality. It's not the best but it's not the worst. My favorite part about eating them is actually the yolk. It has this extremely unique taste to it. It's soft and it's got a good bite to it for an egg.
