You need special rice, I believe it’s called jasmine rice.
If you plan to make it with crab do not buy actual crab legs. Buy imitation crab/crab sticks it tastes better, has crab and fish in it, and is cheaper.

I’ve made sushi from scratch a few times and it turns out great.

Keep it simple and don't add too many ingredients.
Rolls are probably the best to start with.
Get whatever fish you prefer. I lean towards the basic fish like tuna and salmon. Cucumber and avocado rolls are actually really good between the fish sushi.

sushi grade usually means it was quickly frozen after catching and has been frozen for a certain period of time. If you just go to the grocery store and buy any random fish and then eat it raw, you will eventually get parasites.

I've done it myself a bunch OP but I've mainly done cuckfornia rolls.

For the rice you want what the other Anons have suggested, you can find imported from Austrailia/Japan sushi rice with moon runes on it if you have a big grocery store with an international aisle on it (the rice isle, next to the mexican shit usually).

Get any dried seaweed. It's literally everywhere. Usually same area as the rice.

if you want to roll that shit for california rolls and make it look extra pretty, get a bamboo sushi roller off amazon - I don't own this and my hungry-ass friends don't care about presentation. I serve them food-side up anyway so it's harder to tell where the dents are from my hands. Just remember that if you do decide to do rolls, you want the fillings to be evenly distributed as best as you can. Personally, I cut the ingredients up into strips roughly (cream cheese, imitation crab, cucumber, ripe avocados) and lay them with a tiny bit of space in between each set of ingredients, you can find easy guides online to know the exact layout. Don't skimp on the technique though, the inside does matter.

If you're doing california rolls, get fresh ingredients. You can go cheap as fuck (imitiation crab, chicken, for your protein, i've done it, it's fine) but do not skimp out on fresh ingredients. They are just as important as rolling that shit together correctly. I've made them with fresh ingredients but I've fucked up distribution and vice versa and they've come out horribly.

You can find some french fried onions and make an imitation of those tempura crunchy rolls you can get at your trendy america-japanese sushi place, just take a bit of japanese mayo if you have it (you can make it) and add a bit of oyster sauce to a bowl, mix together and spread it over your completed gaijin roll, then take some of those french-fried onions and crunch them up with your (clean) hands. Then sprinkle them over, won't look amazing but it'll be delicious.

Finally, whether you're making sushi or cuck rolls, I think most anons would agree to this: get yourself some wasabi (you can get the tubes for not too much and they last in the fridge for a bit), pickled ginger (again, lasts quite a while in the fridge), and most importantly, a good quality soy sauce. If you genuinely don't know which one to get, get the chink-named stuff at the store but go with the one that says LOW SODIUM. I've had both and let me tell you, the regular shit unless you water it down is unbearably salty and I say this as someone who tosses his sushi ingredients in a tiny bit of salt before rolling shit up. It is almost unpleasant. But after you acquire the ginger/wasabi/soysauce:

Add a dab of wasabi to a tiny little serving bowl of soy sauce, mix well, dip the sushi into the bowl to taste, eat it, then when you want to cleanse your palate, eat a small slice of pickled ginger.

If you have a lot of vegetables over but you're sick of sushi, buy some vietnamese spring rolls and make a dipping sauce. If you own an instant pot you can also make that rice really easy. Just find a recipe, you'll need to mix the rice with some white wine vinegar and some sugar and other shit to get the authentic rice flavor you'll like. It might be expensive out of the gate but all these ingredients (minus the veges) last fucking forever, you can freeze the protein too.

Almost all sushi restaurants in my nation(italy) are run by chinese people which can barely make passable sushi, the tuna usually sucks, the salmon is passable but they put such few fish on top of rice that it barely covers it, any other kind fish is hit or miss.
They go full retard with c*lifornia rolls full of shit like mayonnaise and cheese(oh my god WTF) and such abominations like "tex-mex" sushi. AHHHHHHHHHHHHHHHHHHHHH
It's very different from what I ate in Tokyo's sushi restaurants, where tuna was so fucking good, they would put much more fish and the rice had a more unique taste.
Then some people tell me they don't like sushi and Japanese cuisine sucks. Like dude you didn't even eat Japanese sushi, you ate the low cost chinese version of the muttified recipe.

I've been to Japan and Taiwan and honestly westernized sushi tastes better if you're not a fan of raw fish like me. Sure I can enjoy but it I'd rather just wrap some bacon in a tube of sushi and call it a day. Pork floss and ham makes for great homemade sushi too. Genuine sushi isnt worth it.
You're right about the rice though.
