They do it in Italy too nowadays. It's obviously primary for cost saving but Italians also love trends so I'm sure once it caught on a bit everybody wanted to do it.

They do it for a long time actually.
But the point is having a really airy crust, if you make more crust and leave the dough as a regular pizza is like eating a fucking stone. The weight of the dough is the same more or less, it's just more leavened

Meh, culinary wise we don't follow trends so much. We are not obviously immune, but Italy is one of the most resilient country to food trends

That's why starbucks is bleeding to death, and so domino's
