Funny that you post this, just made it this morning and I wasn't a fan of it.
>Pancetta, diced in a manner so that you get fat + meat in every sliver
>Cook on a cold pan and gradually heat it up so the fat renders
>Sperate bowl, whisk eggs w Parmigianno and/or Pecorino Romano+black pepper
>Boil pasta
>Add to pan of cooked pancetta, w pasta water
>Add egg mixture once you're sure the temp of the pasta will not cook the egg
>Done

Overrated dish honestly. Maybe I'll try the American bastardization next time and see if they're onto something, but for now I don't like carbonara.

you can use cream, it makes the dish a bit easier and you can just use some pasta water and big eggs if you dont have cream on hand, both are OK and give you good results.

I was afraid of making Carbonara because I have consistently fucked up Cacio e Pepe and thought if I cant even get that right, Carbonara is out of my league.

I was amazed how fucking EASY Carbonara is. The Eggs are pretty much cheating when it comes to emulsifying everything.
However after making Carbonara a few times I am now also able to make proper Cacio e pepe.

The best thing about these simple dishes is that I can literally just throw them together on a lazy weeknight. All you need is some cheese and noodles. Maybe egg and bacon if you want some carbonara.

carbonara itself is the most boring and bland dish on earth but it can be made so that not only wh*te people love it
