I tried making chicken kiev recently and it didn't work out well because I couldn't quite keep the chicken folded and butter leaked out during the frying and baking process. I didn't completely fudge it, but was still nonetheless not impressed with the results and feel like I could do better.
Looking at other recipes, I saw another process than the one I used: instead of butterflying the chicken breast and wrapping, they made a cavity by pushing a knife in the breast and wriggling it around, then pushed the butter stick in.
Has anyone tried this alternative method? Does it work better? Any other suggestions?

I freeze the butter, cut a cavity in from the top, then plug it up with a hunk of meat. I just bake mine too as I assume they'll explode frying.

I've done the cavity and filling it with a piping bag, it's pretty good, you get a nice shape. The main thing is doing the breading really well.

You have to thin out the rims of the meat, that way when you fold it, it will stick better. Rolling it in plastic and cooling for an hour will also help, as some anon suggested. Bread it twice, and press it firmly to make the coating stronger.
