I don't really like any Korean-exclusive dishes. I actually really enjoy Chinese-Korean dishes, though.

Also, there are these round pork patty things that are fucking delicious. Then there’s rice and gim, galbi, grilled mackerel, bulgogi, etc.

I've seen both. I guess if they're thick enough they're cakes, but a lot of the time they're like pic related and I thought of them as fat noodles. If we wish to call those cakes, that's fine.
Sometimes they're these larger thin cut cakes of rice instead. It's the same dish I'm talking about overall.

I don't know about any traditional Korean dishes but I use gochujang in just about every marinade I make
