Same reason men are the best at everything else. The top level is extremely careerist with no work-life balance. Men are prone to be hyper-competitive because the prestige is attractive whereas no one gives a shit if a woman is a CEO or not. The only career that makes sense for a woman in Darwinian terms is producing babies.

Institutional sexism.
Restaurants are rowdy environments where no one bats an eye at the usual variety of slurs and threats. This keeps women out of the profession unless they can juggle even more verbal abuse than their male counterparts.
