Lake perch is wonderful when fried, smelt are good too but so small. Walleye is delicious, catfish surprisingly is great too if you bake it right, pretty much any trout can be good. Haddock, cod and tilapia are like unsalted rice, technically food and okay but there's nothing really there and they just carry the flavor of whatever you season them with.

Tuna, arctic char, cod, trout, red snapper, branzino, sole, porgys, deenz just to name a few. All of these are tasty and easy to find and eat. Shit like monkfish and skate make me nauseas

I've never had euro-perch, just the yellow perch we have in the great lakes over here. Also ocean perch but that's not quite the same, larger filets but less flavorful imo. If you manage to get a few eurofish deep-fry the hell out of 'em, I bet they'd be good.

Despite the name, crappie is a good tasting fresh water fish. Catfish and walleye are good also. Carp can be really good if done right, otherwise it tastes like shit.

Monkfish is pretty fucking great.
If you want something local, any of the predator fish usually taste good, pike, perch, pikeperch etc.
All of the bottom-feeders like catfish or carp take getting used to and aren't as eassy to prepare, so maybe skip those for now.
Personally I really like trout, sea bream and cod as well.

Fish have to be bought far ahead of holidays like Christmas, where it is eaten traditionally in central and eastern Europe. People will buy it in advance and keep it in the tub. Yes, keeping the fish in clean water that humans use much cleaner but that's usually not the reason. Pouring more water in regularly in oxygenates the water so they don't suffocate from still water. Some might do it just to detox them though, my uncles used to do it with catfish and tubs in the backyard feeding them bits of corn to keep them alive for 1-2 weeks.
