I have still not made injera myself and I really want to. Had it originally in a african restaurant, tasted amazing. They also had african lemonade, which was one of the most vile lemonades I have ever had. Tasted like those cheap orange candy you got as a kid during Halloween and forgot about in some cupboard for a year until it melted together from the sun shining on it, combined with the most agressive carbonation you could think of. If you just mean the continent? I'd rank northern Arabic dishes- Moroccan, Algerian, Tunisian, Egyptian- at the very top- like cous cous and Moroccan slow cooked chicken thighs.
But for whatever reason in Amerilard land there's this etymological difference, and Moroccan restaurants call themselves specifically Moroccan, Egyptian call themselves Egyptian, etc and when you see an "African restaurant" it's usually a place specializing in eastern/central African food. I'm less into that stuff.

Our was a platter similar to OP pic. Menu said it included chicken. They put 4 hard-boiled and marinated eggs.. That was their chicken. The rest of the meat tasted like it was pulled out of a very thick soup after 4-5 days in a stock pot. It was moist but tough as fuck. All of the various slops were (if I remember correctly, unlikely) just different levels of mashed chickpeas or something with mild sauces of different flavors.

The bread shit tasted like furniture foam. Had a terrible consistency, was almost crumbly yet pliable. Made the obvious jokes immediately: "no wonder ethiopeans are skinny if this is what they have to eat". Except it was only a half joke here. It was actually inedible.

Maybe not exclusive to, but there are quite a few shared crops, more so if you consider the possibility for selective breeding that may have been done if left isolated longer. Then again, strains go both ways. Staple crops rarely have a truly native origin anymore, as there's almost always some selected strain from some region or other introduced at some other region or other at some point, repeated however many times. Heirloom crops are sorta neat. I've found some fully native beans, potatoes, and one chili available in my state, at least so far as we can tell. Nice. I've grown a few of said chili plants. Easy enough, as they're found wild all over and grow like weeds (they're little berries and don't require any real special care like larger peppers). For the beans, some small farms produce them. They're stupid expensive for beans, but still kinda nice to get every now and then. I have yet to find a source on the potatoes outside of the fact that they grow wild as well and all I'd really have to do is read some articles again and wander around certain areas at the right time of year to get my own crops going. I've grown other stuff in the past, but gardening is not my forte.
