Things typically have to be dumbed down for American audiences. Europe knows this, Japan knows this, everyone who exports to the US knows this. You have to remove even the smallest traces of sophistication or nuance and make it as stupid and loud as possible if you want it to succeed. Americans revel in stupidity. The image of a pig rolling in shit is especially apt. Entertaining Americans is the moral equivalent of putting a retarded child in front of a blinking light.

His menu revamps were almost never going to work. The restaurants just don't have the quality chefs needed to prep and execute the menus (the cooks usually are either illegals or look like they just got out of jail a month ago).

Gordon revamps the menu in the way HE would be able to put out quality food in the restaurants and market, discounting the fact the owners don't usually know anything about cooking and the cooks don't even get the hours to come in and do food prep because the restaurants can't afford the labor costs, so these places aren't attracting quality cooks.

He also doesn't really know American cuisine well, he knows French and English. He complained how bizarre it was to put powdered sugar on a Monte Cristo sandwich, when that's how the sandwich is made.
