People here will shit on my for saying this, but honestly Dr. Joel Furhman’s “Nutritarian” diet is one of the simplest, best, and most intuitive approaches out there. You can find more details with some quick googling, but it’s basically just to eat only when you feel hungry, not so much that you feel overfull, and eat mostly foods like greens, vegetables, fruit, whole grains, and (if desired) a bit of meat and dairy. He leans plant-based in his recommendations, but he acknowledges that animal products can be included in moderation and that grains should be eaten moderately. Basically, he gives you a list of the best foods for you (based on research), and then says eat what you, as much as feels comfortable to you. No calorie restriction, portion control, etc. Even if you don’t buy into all of his ideas, I think the intuitive approach is worth adopting.
