I like to fry up rough chopped chicken thigh with ginger powder, soy sauce and chilli to add to the ramen, especially if it's a soup ramen that's based on pork broth. Then you just add all the bit and pieces you might like. Soft boiled eggs, pickled ginger, those seaweed snack sheet things.
In the soup the addition of some white miso goes a treat.
A classic I go to is just cracking a 180g tin of tuna chunks into whatever strongly flavoured noodles you have (the volcano ramen is good for this) and bam you've got a filling meal.

I used to dice up pork belly and fry it up, then when it was brown I'd take it out and add onion, then cabbage.
