What's the secret behind a good homemade tomato sauce?

For me it's a gratuitous amount of thinly sliced garlic and diced onions sauted in the pot before you add the liquids, then making sure you actually cook out a good portion of the liquid in the sauce. Nothing worse than a thin sauce. After that, spice amounts, adding wine or not, and meats are just preference.

Honestly I think an underlooked part is vinegar, preferably white wine vinegar. Tomato sauces typically have a lot of savory/sweet flavors like garlic, oil and onions, and while tomatoes are kind of acidic, they're more sweet than acidic, especially when cooked down. You need some acid to cut through all the other flavors and bring balance to it.
I started doing a new sauce for my pastas and pizzas and everyone tells me it's amazing.
-lotta olive oil
-minced garlic saute till golden brown
-onions diced so fine it's like puree (look up Marco Pierre White's method for onions)
-add tomato puree (nothing added just tomatos)
- salt and pepper to taste, also add a few tablespoons of 'italian seasoning' any generic one will do, most have parsley, oregano and thyme
-then finish with white wine vinegar to taste

It's amazing, and especially cause to pizza and pasta you usually add more savory items like cheese, the acid really helps bring it all together.

Also. Do not over simmer your tomato sauce. 30 minutes MAX. For my simple tomato sauce for spaghetti I gently saute garlic and chili flakes until aromatic. Add my strained tomato sauce and a nice bit of cracked pepper, herbs if you want to. Then I gently simmer for 5 minutes and that's it. Comes out delicious and is so dang easy.

I add lots of olive oil to pot
Then onions until slightly soft and then garlic
Then finely diced habaneros if for myself
Then tomato paste and cook until dark
Then 1 400g can of tomatoes
Season
I cook that for about 30 minutes until it's very dry
1 400 can of tomatoes added
Cook for 5 minutes
Season
I've never had sampled authentic tomato sauces from the homes of grandmothers from the south of italy to the north of italy so I don't know what tomato sauce is actually supposed to taste like though, I fucking hate restaurant italian food
I love having fried chunky pancetta in it too
