I made fried Donuts today and they came out better than expected. But one thing is bogging me, they taste too much like they've been fried. The crust is too greasy and almost too crispy. I am aiming for something really light. Would pre-baking the donuts and giving theme a flash fry afterwards be an option?
I used flour, yeast, 1 egg, milk, 50g butter and some sugar.

I would guess that you're overcooking them, or failing to drain them after.

This looks like a good color, but a little too shiny. Try slightly hotter oil or be sure to pull them before the steam bubbles stop.

Thanks for the suggestions! I think it comes down to frying them for too long. Even when the bubbles stopped I kept the Donuts in the oil to make sure that they won't be underone

I was a teenage fry cook. When the steam bubbles stop, oil begins to seep in. There's this short 15-30 second window where the bubblng slows down before it's a little weak simmer. Gotta catch stuff after it's a good color, but before that happens. Oil temp can drop if you crowd the fryer. This will be obvious because you won't get good bubbles at the beginnng. Having a couple pieces of sacrificial dough to test oil temp before you get rolling is a good idea.
