I’m sick of how they sell 3-4x more than any other item. I’m sick of how we NEED them on our menu to keep our lights on I’m sick how they stink my kitchen up like grease every night. I’m sick of how I need to dedicate half of my entire freezer to patties I’m sick of cheddar cheese and brioche buns. I’m sick of hand cutting fries.

Our menu is full of locally sourced produce, ethically sourced proteins, fresh pasta. Simple approachable delicious food all made from scratch. But what does everyone want?

“I’ll have the burger and a side of fries.”

Goddammit. I never wanted this. I didn’t work my ass off for years in Michelin kitchens to become an expensive burger flipper. What’s more is that I see a burger on damn-near every menu I see.

Premier ultra fine dining steakhouse? Burger. Trendy eatery run by a badass, well-respected chef? BURGER, with house cured bacon. Family run Mexican restaurant? Hamburguesa con papas. Hotel restaurant? breakfast spots?? Every. Single. Bar that serves food??? aaaaaaaaaaaa

Every one of them needs the burger to pay the bills. There’s no escaping the almighty hamburger. It will haunt me throughout my entire career. And I hate it.

I personally have always thought burgers have a pretty low "roof" on how great they can be.
A burgers main strengths are that they prep easy, they're quick to make and even a retard can make quite a lot of them in a bbq. Flavor is not one of the main strengths imo.

Burgers have incredible flavor if you get a good sear on the patty without overcooking it. The burgers I make at home, shallow fried in beef fat and baking soda, absolutely shit on any restaurant burger I've ever eaten. It's like eating prime steak. The FDA regulation on cooking temperature really cripples the potential.
