They've been in the oven for nearly 9h at 60C (140F). The small ones are almost there but the large ones still have quite some water in them. Is there a risk of "over-drying" the small ones if left in there until they're all ready? Is it even a thing?

Any tips on how to make the whole process quicker other than cutting them all small? I want big mushrooms.

never dried mushrooms but i dry tons of meat and i will definitely take the smaller pieces out before the bigger ones if they're finished

sun drying them with or without a fan might make the process quicker depending on your weather and climate
or a dehydrator will too

Still too cold for that. I'll try in summer, but I live in a very, very humid area so even then it might not be ideal.

i did this and refined the technique over the years. you have to do it again and again to find the right setting and time/thickness of the slices.
