Burger slices. One(1) tomato slice heavily(!!) salted with a bit of garlic powder and pepper centered.
Note that this only really works when there's pressure involved. The tomato cooks through fairly quickly that way and renders an incredibly pleasing combination of flavours.

Gruyere or a sharp cheddar. With a sourdough high quality sourdough. That said, nothing can beat a white bread and American cheese grilled cheese with Campbell's tomato soup. Might just be the nostalgia, but I fucking adore it and eat it weekly.

Definitely romano with pepperberry, and asiago. Throw in some home made kimchi in there, burn the bread and don't melt the cheese for the best results.
