I've personally found that only the salt in marinades actually penetrate the chicken. Save the marinade for larger cuts you can inject. For smaller cuts ie. legs or wings with skin, use a dry brine consisting of kosher salt and baking powder. Let it sit overnight in your fridge uncovered. Finish the chicken in the oven or grill with your desired marinade or sauce applied over the chicken pieces to coat. Simple as
