I'm kinda scared it'll be shit because all the good ramen I ever had had animal products in it and I don't see how you can get a savory flavor from not using meat

Really OP, to play devil's advocate, a lot of vegetarian meals I've had are not bad. Vegan food is usually the stuff you have to worry about easily fucking up.

Mushrooms and soy sauce will add enough savoriness. There's usually more of an issue with texture since you're not going to have any gelatin in your broth, but you might be able to add a tiny bit of starch to make up for that. And maybe add a little extra fat since there isn't much coming from anything else either.
