The U.S used to have a massive domestic cider industry and alcoholic cider was widely preferred over beer. Then Prohibition happened, and a bunch of moralfags cut down the vast majority of apple orchards, resulting in the loss of dozens of carefully cultivated varieties of apples that were lost forever. Since grains grow much faster than apple trees, grain alcohols replaced ciders after prohibition was repealed and cider never regained its past popularity.

Even after prohibition ended there was strict legislation on the production of alcohol. It wasn't until Jimmy Carter's presidency that much of this legislation was lifted, which led to the eventual emergence of microbreweries. Cider has been having a regrowth in recent years, but it's been a slow regrowth and will probably never catch up to beers again.

CIder is quite classic in colonial times. Washington owned an apple orchard to make, you guessed it, cider.

Also Americans don't like cider because it's not sweet enough. This is evident when they first imported strongbow but everyone hated it so they had to bring out "golden apple" flavor which was much MUCH sweeter, and thus more palatable for Americans.

Because I can't find a cider dry enough for me (Woodchuck granny smith is close but I can never find it in my area) I just make my own. It's really simple actually.

It's stupid easy (as long as you like dry cider). You just fill up a food safe bucket with apple juice with headspace, add yeast and let it ferment for a couple weeks. You don't even need to press your own apples or do anything fancy; I've gotten great results from store bought cider.

The best part is that it's way cheaper than brewery cider, around $6/gallon or less when the juice is on sale.

For Americans, "juice" is always non alcoholic, "apple wine" is always alcoholic, and "cider" is either alcoholic or non alcoholic. Non alcoholic cider isn't any different than juice by definition, though there may be colloquial associations like "cider" being less filtered or less sweetened than "juice." "Cider" can also be just a fancy term that small farms use to market their juice to rich hippies.

Basically, when I think of apple juice I picture the shelf stable sugar water that kids like. When I picture cider, I think of alcoholic or maybe refrigerated high quality non-alcholic product.

dunno what you're using but according to the sugar wash calculator https://homedistiller.org/wiki/htm/calcs/calcs_rad14701.htm here when I put in .448kg of total sugars as calculated from the juice label per 1 gallon of liquid, I come up with 7% once it's dry.
But I also don't have a hydrometer and I could be retarded, so there's that. But other sites I've looked up for calculating abv of cider say to use a sugar wash calculator, so there's that too.

So it kind of checks out that fermenting apple cider without adding sugar would keep it in the 5% range, and as stated early on in the article it can take as little as 4 days for fermentation, which I usually take as when the airlock stops bubbling and the cider gets clear.
