Garlic, garlic greens and some other stuff for original gyoza. Literally anything for variations like tofu, shrimp, any vegetable.
Just make sure to buy the skins or it's gonna take really really long to make them

The best way to go about it is to make a big batch. The first few will be a bit tricky but by the end you'll get the hang of it and you'll have 50-100 dumplings you can freeze and cook whenever
