If it's Belgian, you can't go wrong.
Red ales are great too, but I cant recommend sour reds, those are best for cooking only, not drinking.
Stouts and porters are my favorites. There was this one hipstery stout I had several times that was, like, 12-14% that was a very spiced chocolate sort of deal that particularly great.
Breakfast stout/porter is also good for just that.
I'm always on the lookout for any spiced beers. Recommendations?

Rochefort brews with a little coriander and it's wonderful. As far as spiced dark ales go, try pic related if you can find it. There's no spices, but amburana wood spirals give it a lovely gingerbread/nutmeg impression. Really incredible wood.

No, pale malt existed before. The problem was that it was air dried, which took longer and molding was a bigger issue, so it was more expensive and time consuming.
Kilning or smoking was the faster and more shelf stable variant.
Industrialization just made making pale malts and lagers possible on a larger scale and not dependend on season anymore.

Keep the grist simple. Mostly, if not entirely, pilsner malt. Use sugar (cane sugar for lighter ales, dark candy sugar - NOT brown sugar- for dubbels and quads. Mash for attenuation if you're going all grain - I keep my belgians at 148*F for 90 minutes. A proper belgian ale is dry. If you're making something boozy like a tripel or quad, expect to have to condition it for a while before it gets really good. Use healthy yeast, preferably with a starter. Most importantly, make sure its Belgian yeast. That's crucial, since English and American strains won't get you that flavor.

Thanks. I completed my supply run. I've got light candy sugar, pilsner malt extract, carapils malt and hallertau hops. I should be making about 5 litres at tripel strength.
